Are you a sweet potato lover like I am? This is the perfect easy-going, fast yet healthy recipe and you don’t need to clean up lot of things after cooking.
Some years ago I had sweet potatoes for the first time, back then I would have never thought I would fall in love with them so much. If you made the same experience I hope I can motivate you to give it another try, cause this yummy roasted sweet potato wedges might change your mind completely. It’s my current favorite and is easy and fast to prepare. Plus it’s overall healthy and usually all local cultivated ingredients (except the Tofu of course), so you do good for the environment as well ;))
INGREDIENTS
4-5 Sweet Potatoes
5 Zucchini’s
5-6 Carrots
1 Tofu
Olive Oil
Pinch of Pepper
Pinch of Salt
Pinch of Paprika
DIRECTIONS
Peel the sweet potatoes and carrots, and slice all ingredients in little wedges. Prepare a baking sheet with parchment paper, add all ingredients and sprinkle them with olive oil and spice them as you like it. That’s it! Now you can put your meal in the preheated oven for about 30-40 minutes at 250°C. Additional you can add some pumpkin seeds, or chia seeds, or any other flavors / herbs you like. Enjoy!

200gr. of sweet potatoes (1 cup) are a great source for your daily amount of: vitamin A (769%), vitamin C (65%), vitamin B6 (29%) and Potassium (27%). Plus they also contain some smaller amount of Magnesium (14%), Copper (16%), Phosphorus (11%), Iron and Calcium (both 8%).
